1/2 C rice vinegar
2 TBL. sugar
1 tsp. salt
2 TBL. chopped red chilies, or to taste
1/2 C sliced shallots
2. C sliced cucumbers
2 TBL. chopped peanuts (optional)
2 TBL chopped cilanto (optional)
green onion for garnish (again, optional)
1. In a small saucepan, cook vinegar, sugar and salt over low heat, stirring, until sugar and salt are dissolved. Remove from heat and stick it in the fridge to cool.
2. When it's room temperature or colder, combine it with the cucumbers, chilies and shallots, and sprinkle the optional ingredients on top.
3. Serve it immediately, or it will get gross.
