Chocolate Cola Cake

Ingredients:
For cake:
2 cups flour
2 cups sugar
1/2 tsp salt
1 1/2 tsp baking powder *
1/2 tsp cinnamon
1 cup butter
1/4 cup unsweetened cocoa powder
1 cup Coca-Cola
1/2 cup buttermilk
2 eggs
1 tsp vanilla extract
For glaze:
1/2 cup butter
1/4 cup unsweetened cocoa powder
1/2 cup Coca-Cola
4 cups confectioner's sugar
1 cup chopped pecans (optional)
Instructions:
1. Preheat oven to 350ยบ, and butter or grease a 9x13" cake pan.
2. In a large bowl, mix flour, sugar, salt, baking powder, and cinnamon.
3. In a saucepan over medium high heat, combine butter, cocoa powder, Coca-Cola, and buttermilk. Stir frequently until it boils, then remove it from the heat.
4. Whisk the liquid mixture into the dry ingredients until combined.
5. Add eggs and vanilla extract, and mix.
6. Pour into pan, and bake for about 30 minutes. **
7. When cake is almost done, make the glaze. In saucepan, mix butter, cocoa powder, and Coca-Cola. Bring to a boil, then remove from heat.
8. Slowly stir in confectioner's sugar until smooth.
9. Stir in chopped pecans (if desired).
10. When cake is done, pour the warm glaze over the top of the hot cake. ***
Notes:
* May substitute baking soda for baking powder. ** Don't overbake. A toothpick should come out clean when it's done. *** Let the cake cool for a few minutes before eating. Cake may be enjoyed warm or cold. (I like to heat it for about 20 seconds to melt the glaze.) **** Serve with whipped cream if desired. Yum!
