green leaf lettuce
1 fresh golden-sweet pinapple, cut into bite-sized bits.
a little bit of vegetable oil
To make the dressing, mix about 1/2 C lime juice and a splash of vegetable oil. Microwave it until it's slighly warm. Add honey, bit by bit, until the sourness of the lime and the sweetness of the honey are balanced. Or, until you think it is most delicious. If you put too much honey, you can always add more lime juice. Stick the dressing in the fridge to get cold.
Combine lettuce and pineapple bits in a salad bowl and toss with the dressing.
