Watermelon Granita (hits: 1690 )

4 cups cubed watermelon, seeded (about 3 lbs.)
1/2 cup water
1/2 cup bottled peach juice
1/4 cup sugar
2 Tbsp lemon juice
In saucepan over high heat bring peach juice,
sugar and 1/2 cup water to boil; immediately
remove from heat. Cool 20 minutes. In blender
puree watermelon with enough peach juice mixture to blend. Add remaining peach juice and lemon juice. Pour into 9"X13" glass baking pan.
Place in freezer until mixture starts to freeze
around edges (about 1 hour). With fork, stir
pulling frozen mixture from edges. Return to
freezer for 2 hours, stirring every 30 minutes.
Remove from freezer, stir and enjoy!
I used apricot nectar in place of the
peach juice and it was great!
I set the timer so I wouldn't forget to stir at appropriate intervals.
