Ingredients: 1 small yellow onion 1 dozen red jalape?os (cored) 1 bunch cilantro (no stems) 1 clove garlic 1 small lime 5 large tomatoes (firm) 1 bunch scallions (green onions) 2 Tbsp celery salt ? tsp dill weed 1 Tbsp oregano
Instructions: 1. coarsely chop onion, peppers and scallions 2. finely chop garlic 3. place in food processor, high setting. chop in cilantro remove to large (2+ liter) container 4. dice tomatoes. in blender, blend 2 tomatoes and juice from lime. remove to container. repeat for additional tomatoes 5. add salt and spices mix thoroughly. add salt to taste
Notes: you can vary the quantities of peppers/tomatoes to increase/decrease the 'temperature' of the salsa.
