Ingredients: 4 chicken breasts corn tortillas 1 small can diced green chiles 1 can cream of mushroom soup 1 can cream of chicken soup 1 cup shredded cheese (jack or cheddar or both)
Instructions: Boil chicken breasts until tender. Cool and shred into bite size pieces. Mix soups, chiles, cheese and chicken. Cut tortillas into triangles and arrange on bottom of rectangular casserole dish sprayed with Pam or coated with oil (pour a little in pan and spread with a paper towel). Alternate soup mixture and tortillas until all used and top with more cheese. Bake at 350 degrees for about 1/2 hour or until bubbly in center. (If the chicken has been refrigerated it may take a bit longer). Can also be cooked in the microwave till bubbly in center.
Notes: Can be doubled to take to pot luck dinners, a real popular dish at those kinds of things! Yummy!
